1 whole wheat tortilla
1/4 cup canned or cooked black beans, drained
1/4 cup salsa (fresh, canned, or bottled), drained
2 eggs
2 slices favorite cheese (cheddar or monterey jack work best)
1 tablespoon butter
guacamole or sliced fresh avocado (optional)
salt and pepper
Directions:
Heat the tortilla in a frying pan and set aside on a plate.
Heat the black beans and salsa in the same pan and set aside in a covered bowl.
Melt the butter in the pan; fry the 2 eggs until one side is done. Flip.
Add 1 slice cheese atop each egg and cook until the eggs are done.
Pour the bean/salsa mix onto the tortilla.
Set the eggs atop the beans/salsa cheese-side down.
Add salt and pepper to taste
Top with guacamole or slices of fresh avocado, if desired
Serve with fresh fruit of choice

1 whole wheat pita bread round
2 eggs, beaten
1/2 cup Jimmy Dean’s ground sausage
2 green onions, diced
1 small tomato, diced
1/2 cup favorite cheese, shredded
guacamole, salsa, or sliced fresh avocado (optional)
salt and pepper
Directions:
Cook the sausage in a frying pan until separated and crumbled. Drain sausage on a plate, leaving the fat in the pan.
Saute the green onion and tomato in the pan until soft.
Add the eggs to the onions/tomatoes and cook until done.
Add salt and pepper to taste.
Cut the pita in half. Scoop the egg mixture into each half and top with the shredded cheese.
Heat pita halves in a microwave oven on high for 30-45 seconds to heat the pita bread and melt the cheese.
Top with guacamole, salsa, or slices of fresh avocado, if desired.
Serve with fresh fruit of choice
